Chickpea, orange and mint salad

Hellooo antioxidants! We love the rich colour of this tangy salad!



Weight-loss: Chickpeas are an excellent source of fibre and protein (improving blood sugar levels, helping you feel fuller for longer and reduce your cravings) and are low in fat.


 

Supercharge your health: in addition, they are a good source of minerals such as iron, zinc, copper, folic acid, and magnesium. Oranges and Pomegranates are a great source of fibre. They also contain antioxidants such as Vitamin C which gives your body the best defence against colds and flu.


 

Ingredients (serves 2) 1 orange 400g tin chickpeas, rinsed and drained 100g feta cheese, broken into chunks (or if vegan, chunks of smoked tofu). 1 small bunch mint, chopped 1 small bunch parsley, chopped 1 finely sliced spring onion 1 segmented orange 3 tbsp pomegranate seeds Dressing 2 tbsp olive oil 1 orange, juiced 1 tbsp cider vinegar Method Peel the orange and cut into segments, reserving any juices Mix with the rest of the ingredients
