Fresh Fruit & Coconut Water Ice-Lollies

Simple, refreshing, healthy – the perfect dessert or snack on a summers day.

Coconut water is packed with important electrolytes such as potassium and magnesium, making it super hydrating!


Makes 6 – 8 lollies



 

Ingredients


1 ½ cups coconut water


A selection of fresh fruit (e.g. whole blueberries and raspberries, sliced strawberries, sliced kiwi)


2 tbsp. maple syrup or a pinch of stevia (optional)


 

Directions:


Simply fill each ice-lolly mould with fresh fruit. Don’t pack it in, rather just place each piece of fruit loosely on top of each other.


Whisk together the coconut water and sweetener (i.e. the maple syrup or stevia), and pour into each mould.


Be careful not to fill quite to the top of the mould as the water will expand when frozen.


Place in the freezer for at least 4 hours.


Tip: Before consuming the frozen lollies, run the moulds under warm water for a minute or so, which helps to loosen them out.
